Wild Alaska King Salmon
Yes, this is the real thing.  This Native Alaskan King Salmon was flown directly to us from Petersburg, Alaska.  The filets are generous and if you have never eaten Wild King, do not miss this opportunity.  It is extremely hard to come by (Thanks Mom), and you will never see it for a better price.  Tonight we are serving it honey/dill glazed with rice pilaf and fresh vegetables.
For a special treat, try a side of slow roasted peach butter.

 Almond Crusted Halibut
The Halibut is truly a mild and clean tasting white fish.  It is often called the "Barn Door Fish" because of its tremendous size and dimensions.  We take this exceptional fish and coat one side in a very light almond and herb crust, then it is seared to perfection.  The filet is finished with a citrus butter sauce and accompanied by wild and white rice, and fresh vegetables.

Chicken and Pork

Chicken Roulade
Boneless chicken breast rolled and stuffed with vegetables and Swiss cheese, then seared to perfection.  Served in a white wine cream sauce and accompanied by wild and white rice and fresh vegetables.

Stuffed Pork Shop
A 12-oz. Bone-in Pork Chop is packed with bacon, apple, and vegetable stuffing.  It is grilled and finished with a caramelized shallot sauce.  The Chop is accompanied by oven roasted red new potatoes and fresh vegetables.


Dr. Salisbury Steak
In the 19th Century, Dr. J.H. Salisbury prescribed a healthy dose of beef to all clients for all ailments.  In the 21st Century, all Four Bears prescribe the same.  A chopped 8 oz. steak is mixed with celery & onions, then grilled and coated in a beefy mushroom sauce.  The steak is accompanied by oven roasted red new potatoes and vegetables.

Blue Beards Beef
Filet of beef tenderloin grilled to the temperature of your choice and finished with Gorgonzola compound butter.  The steak is then placed in a Rich Bordelaise sauce.  Blue Beards Beef is accompanied by oven roasted red new potatoes and fresh vegetables.

A 16-Ounce T-Bone steak lightly smoked and grilled to the temperature of your choice.  Served with sautéed mushrooms and fries.
Entrees also come with freshly baked rolls and butter.
